We are producer of Limoux AOC Sparkling wines (method identical to Champagne) developing Blanquette and Crémant de Limoux. We have existed since 1875, family home for 6 generations.
Our crémants and blanquettes are under the name controlled and protected, from our 26 hectares of vineyards divided into three domains: Saint-Jean, La Gaste and Tabor.
We develop our wines in accordance with the traditional method. First fermentation at temperature controlled in vats, assemblies of several years of harvests. Second, natural bottle fermentation and long bottle ageing. The riddling is always done manually, that is, a quarter turn every day for 30 days. And finally, the degorgement is done on the fly. We have been keeping our tradition and experience still today since 1875.
