The ‘remuage’ process (the process by which sediment in a wine bottle is drawn to the bottle’s neck where it can be removed), is to turn each bottle 1/4 turn per day for 30 days. Maison GUINOT is the only winery in Limoux still practicing manual remuage, guaranteeing quality and naturalness.
