After bottling, the bottles are stacked in cellars. The aging process is ‘sur lie’ (leaving the wine in contact with its lees i.e. deposits of yeast). The primary reasons for sur lie ageing are usually to enhance the structure and feel of a wine, to give it extra body and increase the aromatic complexity, flavour,aroma depth and length of the wine.
